Ingredients:
1lb Dried Navy Beans
2 ½ Teaspoons Salt
¼ Teaspoon Baking Soda
1 Pack of Bacon (use 6-8 Slices if you’d like)
1 Yellow Onion (diced)
1 Cup Dark Brown Sugar
1 TBS Maple Syrup
2 TBS Apple Cider Vinegar
½ Cup Ketchup
½ Cup of Your Favorite BBQ Sauce
**SAVE 2 CUPS OF BEAN JUICE FOR THE COOK
Directions:
Prepare Beans as instructed on package- add salt and baking soda with the boil.
Once completed, put your smoker to 350°.
In a pan, cook the bacon until crisp.
Once bacon is cooked, add your onions and cook until translucent.
Pour your beans, bacon, onions, brown sugar, maple syrup, ketchup, bbq sauce, apple cider vinegar & 1 ½ cup of bean juice in your pan.
Mix well and cover with foil.
Place in Smoker for 1 hour.
Remove foil, check to see if beans are dry. If dry, add the remaining ½ Cup of bean juice to beans, stir well & put back on smoker uncovered.
Check your beans, stir and check 10 mins and 20 mins in for sauce to thicken.
Once the beans have reached your desired consistency, take them out of the smoker, serve them as a delicious side with your favorite barbecue, and enjoy!
